Low Carb Mashed Cauliflower recipe:

2 medium heads of cauliflower (florets removed)
6 oz. softened cream cheese
1/3 cup milk
Ground black pepper
Chopped parsley or chives for garnish
1- Bring a large pot of water to boil. Add cauliflower and cook for 10 minutes or until tender. Drain and remove excess water with a clean dish towel.
2- Return cauliflower to pot and mash it with fork or potato masher until there are no large chunks.
3- Add cream cheese, milk, and seasoning (salt and pepper). Mash in completely until everything is combined and creamy. Use milk to get your desired consistency.
4- Serve and garnish with chopped parsley or chives.

It’s very important to remove as much water as possible from the cauliflower before you begin to mash them. If you want to preserve the nutrients and avoid waterlogged cauliflower, steam them until tender instead of boiling.
