2 medium heads of cauliflower (florets removed)

Pinch salt

DIRECTIONS

1- Bring a large pot of water to boil. Add cauliflower and cook for 10 minutes or until tender. Drain and remove excess water with a clean dish towel.

2- Return cauliflower to pot and mash it with fork or potato masher until there are no large chunks.

3- Add cream cheese, milk, and seasoning (salt and pepper). Mash in completely until everything is combined and creamy. Use milk to get your desired consistency.

4- Serve and garnish with chopped parsley or chives.
