This version of the traditional pumpkin bread recipe is all sorts of flavourful. spicy, and warm. It’s the perfect snack to have with black coffee or a warm chai latte.

The best part is that it is quite easy to make too.

For the Pumpkin Chai Loaf:

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons chai spice mix (or a combination of ground cinnamon, cardamom, cloves, and ginger)
  • 3/4 cup unsalted butter, softened
  • 1 1/2 cup granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, and chai spice mix. Set this dry mixture aside.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture becomes light and fluffy.
  4. Add the eggs to the butter-sugar mixture, one at a time, beating well after each addition.
  5. Stir in the pumpkin puree, buttermilk, and vanilla extract until the mixture is well combined.
  6. Gradually add the dry mixture to the wet mixture, mixing until just combined. Be careful not to overmix, as this can make the loaf dense.
  7. Pour the batter into the prepared loaf pan and spread it evenly.
  8. Bake in the preheated oven for about 50-60 minutes or until a toothpick inserted into the center comes out clean. Keep an eye on it, as baking times can vary.
  9. Once the loaf is done, remove it from the oven and allow it to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.
